Calzones

A stuffed pizza pocket filled with cheese and your favorite toppings.

Ingredients:
  • 1 Pro Dough Company dough ball (12–14 oz)

  • 1/2 cup ricotta cheese

  • 1/2 cup shredded mozzarella

  • Optional: sautéed spinach, cooked sausage, or mushrooms

  • Olive oil, for brushing


Instructions:
  1. Preheat oven to 425°F.

  2. Roll dough into a 10–12" circle.

  3. On one half, layer ricotta, mozzarella, and optional fillings.

  4. Fold over and crimp the edges to seal. Cut a few steam vents on top.

  5. Place on a baking sheet and brush with olive oil.

  6. Bake for 15–18 minutes until golden and cooked through.
